Next Stop: Central Thailand
As previously mentioned, Thai food should be split into four regional cuisines corresponding to the four main regions of the country: Northern, Northeastern (or Isan), Central and Southern. Last week we had Southern Thai, and this week we move onto Central Thai cuisine, via the Vilom Thai restaurant.
Central Thai cuisine contains all the popular dishes usually associated with Thai food:
Tom yam - hot & sour soup with meat. For shrimp soup it is called Tom yam goong or Tom yam kung, for seafood (typically shrimp, squid, fish) Tom yam talae, for chicken Tom yam gai.
Satay - grilled meat, usually pork or chicken, served with peanut sauce (originally from Indonesia).
Red curry (Gaeng Phet = 'hot curry') - made with dried red chillies
Green curry (Gaeng khiew-waan) - sweet green curry, made with fresh green chillies and flavoured with cumin, with chicken or fishballs.
Massaman curry - yellow curry, usually with beef.
Pad prik - stir-fried with chilli, usually beef called Neua pad prik.
Pad kaphrao - stir-fried with basil, beef, pork or chicken.
Panang - dry curry with beef, chicken, or pork.

Hey, I had a Thai meal in your honour here in Seattle. Crab and cream cheese wontons with plum sauce and a "fisherman rice soup" which had a ginger broth with rice and a whole lot of un-kosher fruit of the sea in it, along with a slice of Pacific salmon. : )
A couple of local takes on traditional favourites. Really ace stuff. Jai Thai on 1st Avenue, Seattle, if you're in town.
